Get a tub of one of these bad boys, brown the protein of your choice, remove, saute onions+garlic til tender and fragant, add back in the protein + any other veg you want (
potatoes, corn, peas, carrots, broccoli, pak choy, literally anything you want will work), add a few big tablespoons of your curry paste + coconut milk and stew until its tender. potatos will thicken it slightly, if you want it thicker add a cornstarch slurry but its nicer as is tbh.
i always eyeball this based on about 400g of protein/meat + 400g of veggies. 2-4 tablespoons of paste + a carton of coconut milk is usually enough. easy peasies
