Got some egg allergies in the family, and a 1/4 of plain whole fat Greek yogurt and a splash of liquid per egg does a great job for baking and pancakes and waffles 😄
If you by chance have flax seed or are able to get any/can have it. You can mix 1 tbsp of flax seed with 3 tbsp of water and leave to sit for about 10 min as an egg substitute.
I researched some alternatives to eggs. Bob’s Red Mill has an egg replacer that I have used for baking. You can also use whipped aquafaba liquid. (Chickpea liquid) Someone suggested seltzer water.
