Now that I have no garden tomatoes, I've been dicing an apple and putting it in pasta with olive oil and garlic, and it's actually quite good.

It's easy. Boil the pasta, drain, add diced apples (I use Gala), olive oil, and garlic powder or fresh garlic. Heat up a little more on stove while stirring. Plate. Grate fresh parmesan on top.
