I know that millions or species sexually reproduce with each sex producing one type of gamete so "no a strict binary" is either false or purely a semantic issue

Wouldn't matter if only one species in the world had anything outside the male-female binary, that one species would still be enough to stop it from actually being a binary.

With this kind of absolute expectations for scientific concepts we can stop attempting to understand how the world works alltogether, everything is a unique mass of atoms, or maybe being an atom is a spectrum too

The analogy between sex and atoms is not straightforward, but my point is that it is trivial and uninteresting that everything is made of something else. Knowing if an organism is female or male allows to understand and predict its behavior and anatomy, which is the point of biology.
