If you use it for thickening, instead of using as a coating agent for stuff like jojo potatoes, you want to add it REAL LATE in the process or instead of you food staying thickened, it will thin back out!
Interesting thought, maybe with an egg wash.
Wash fish, let mostly dry, roll in potato flakes, then dip into or paint on egg wash, then 2nd roll in flakes.
I’d air fry that on a crisper plate maybe 375 for 5 mins then 400 for 5 mins & flip & 5 more at 400*F.
