Full disclosure: I used potato flakes instead of actual POTATOES. I might have lost a few peasant points for that. But I feel like we’ve had potato flakes for a few generations now.
It throws me every time because it seems so simple but it’s always a fair bit of prep work…. Unless you use canned soup or gravy I guess AND make the potatoes from instant. I’ve always made my own gravy or mushroom soup for it.
I had heard of ricotta variations but figured I’d start simple.
🤔 that reminds me. I recently watched a tasting history vid that I think said the first gnocchi (before new world potatoes) were basically cheese and flour.
There’s a show you can find for free on YouTube called Two Greedy Italians—two older gentleman (well known Italian chefs in the UK) who travel around Italy cooking and poking fun at each other. It’s so wholesome, appetizing, and a balm for those crazy times. Enjoy!

I made cottage pie with some fancy hamburger, myself. My inner Swede is *pleased* 😂
Simple pleasures!
I thicken the meat/veg mixture with a bit of flour & broth, & let that all simmer while I make the mashed potatoes from scratch.
You could also use a gravy mix?
I don't make *perfect* mashed potatoes, either. They just have to be well-seasoned & not too lumpy 😉
