Ginger cake is the best particularly if the starting mixture is quite liquid. I too use a very old recipe..I think mine is the McDougals one from the 60s rather than Bero.
I think I'll have to make one now having seen yours.
My mum went through 8 gingerbread recipes before finding the one she'd used when we were kids.
The one from a 1970's Bero book was the winner (the most recent Bero edition has a different recipe), just the right amount of sticky gingeryness. 😁
I actually like the sound of the corned beef roll 😉 my mums corned beef hash with crusty bread when we were growing up was always a treat. With beetroot or red cabbage 😋
My sister in law makes a lovely ginger cake made from a Caribbean recipe handed down from her Mum. Along with her Christmas cake, it’s the highlight of our Christmas.
