To a European, lazily throwing canned beans and chili powder on something is what makes anything "mexican" and it got to a point that it took me 25 years before I ever decided to ever try a taco, out of my prior disgust.
I saw someone on here post about “the most authentic Mexican food in Denver”, and it was a picture of nachos with lettuce and shredded cheddar that looked like it was from Taco Bell.
That’s bonkers because there is a LARGE Mexican community in colorado including Denver. The poster must have been scared to go to any of the restaurants the community actually frequents. I’m not saying it’s SoCal but it’s not South Dakota either.

On the other hand: I never had salmon growing up, except the tinned stuff, so I thought I didn't care for it until I was about 20.
