When Odd Bunch includes huge onions two weeks in a row you make caramelized onions. Three huge onions down to this. I read onions also freeze well but I’m going to freeze this yumminess instead.

Onions also dehydrate REALLY well, which simultaneously caramels them. They store forever dry without refrigeration, and taste amazing in soups. Not quite as good in sauces and definitely not in stirs.
I put I believe eight onions in one medium yogurt container. Still haven't finished them.
I dice them really small - their volume absolutely disappears with the dehydrating process, which means a lot of water needs to come out... Which means they need to be cut small. Peppers work too, I've found carrots a bit leathery but maybe I'm using the wrong temperature.
To clarify, it doesn't really caramelize, but it eliminates all the zing. They end up quite sweet and are really good to add to soups. My eight-onion batch took one day to make and has lasted wwaaaaaaay longer than that haha.
