It is excellent. Very nice pairing with the pork chops. @jmwclark.bsky.social made a rosemary parm polenta and I did a shallot and Pinot pan sauce so it was a good dinner. I’m still sipping and enjoying it as it evolves in my glass.

I prefer quality meat and feature it over seasoning. With pork chops & steaks, I like medium so I them & allow them to rest before serving. It is cold in Ohio tonight so I didn’t fire up the grill; just did a sear on an iron skillet & made a pan sauce with shallots and wine. Simple and delicious.
