Frankly it depends on the type of gameplay you're looking for. I personally really enjoy classic turn based combat, so 4, 6, and original 7 are really solid. If you prefer something more modern, 10, 15, and 16 are excellent. All of them are decently long, though.

Only ones I would avoid starting with are 2, 8, and 13. Aside from those three almost any are good. IMO 4 makes for a really good jumping on point.

Pick whichever seems the most interesting to you, tbh. I'd personally rec 10 if only because it's on basically every console (and PC) and it's turn based and linear (in a good way) so it's one of the better games to start with. After that, go ham.
