These are my usual brioche style buns, but I made a yudane which is flour hot water mixture used in things like Shokupan. Worked wonderfully! A much softer and lighter bun, that can still hold a big burger! These are made with Highwood Crossing Organic AP flour and Organic Whole Wheat flour.
