Would a coyote actually try to chase a human down? Pretty sure a good punt kick is all you would need to scare them off

Yes.
I have seen them react to larger animals.
But once they realize size and do that mental assessment, they disengage.

I thought they hunted either alone or in pairs? I've always assumed they were the wolf version of raccoons, especially with their contact with humans.

They collaborate sometimes. If I see one coyote, I'm not worried. If I see three, I get nervous.

That's reminds me, Coyotes and Badgers sometimes work together to hunt smaller den prey. Now that's a Disney movie plot I could get behind.
