So the "Industrial Apple IIe" is now the Jonathan Apple IIe. It has a MicroTrends Jonothan card that has a Motorola 68000 on it. I just booted up Microware OS-9/68000 on this Apple IIe. In 1982, I took "Introductory Data Processing" in 11th grade.
My school had 1 Apple II and my teacher removed the keyboard and attached a punch card reader to it because that's what we'd use in the future and this computer would have to last 10+ years.

To be fair, I recently watched a 20 year-old connect the audio out of a smartphone to the cassette tape I/O port on an apple II and download and boot a 44+ year old game.

I can’t find it now, but there used to be a web site that hosted audio recordings of these cassettes with a player embedded in the page so you could easily do exactly what you’re describing. https://Archive.org has a fair amount of them available too. This is actually what motivated me to get a MiSTer.
