Did about a cup of liquid to the one onion. Half of that vinegar. Split the vinegar mix into half/half apple cider and regular. Get that to a bare simmer with about 2 teaspoons kosher salt and a tablespoon of regular sugar and pour over.

Also, because sometimes the pickling/canning people come out of the woodwork -- This is not a canning recipe or anything for long-term storage! This is a quick condiment to be used within a couple days, not something like that find someone who knows what they're doing for that. It's not me.

We are doing the traditional Gringo taco seasoning pack, so it's impossible ground for tomorrow. It's also surprisingly good for that type an application.

I haven't tried it at home except for burgers, but I did get some impossible gringo tacos at Del Taco a couple times. Great texture for that. The soyrizo has a similar flavor; maybe a little spicier, but it's pleasantly juicier
