Free radicals #17: #16 was esoteric. Keap1 is a protein that senses electrophiles (electron lovers). Polyphenols can be oxidized to become electrophiles. When electrophiles bind to Keap1, another protein, Nrf2, increases and binds to DNA promoting antioxidant enzyme production. 🧪
