Took a couple days to get back to this, but the lamb vindaloo jerky is an unqualified success. Tender and just enough moistness, while still tough enough to provide a good chew. Rendering down the fat and adding it to the spice paste is definitely the way to go here 9/10

New jerky experiment, same old vindaloo paste, but this time it’s lamb Seems obvious now, but it wasn’t until after We did it with beef to get the idea As with the last beef one, We’ve added the rendered off fat back in for the marinade, seems to help keep the results moist
