If you ever feel like throwing your players off guard, have an NPC use the Stabby Stabber stat block, and have them do their thing to whatever enemy they’re fighting. My players went to Spellhold (a wizard asylum from BG2) and one of the inmates got out to help. He took on an entire mage in one go.
