Given what we know from Picard and these are the voyages, NX-01 was most likely in her original configuration for her entire UES service and then refit and recommissioned as USS Enterprise for Federation service. The OG-E actually could have had a long service life. #StarTrek

Why were there so many Sovereign-class ship in Picard? That's simple, it was never designed to replace the Galaxy-class. That goes to the Imp Galaxy aka the Ross-class and later Odyssey classes. The Sovereign was designed to replace the Excelsior.
