Food markets we've visited recently feature Handiya, the fermented rice drink. The fermentation starter/accelerator is Bakhar (picture) - a rice+herb mixture dried until it resembles whitish pebbles. Handiya has less than 2% alcohol content, but puts everyone is a mellow mood!
