The pro-US-flags at protests crowd is right and I've been silly to have been attending without one. Luckily Flag Day is coming up (June 14) so they're on sale everywhere. My posters will still be as bad as my posts, but a lil 'Ol Glory should hopefully even out the messaging issues.

Never really see it in recipes, but you can totally give stretch and folds to a starter to get a head-start on gluten development. Probably most useful when working with very wet doughs by hand--dough starts out with more tensile strength and less goopy to handle.
