Great time last night with great friends.

The first measles death in the US in a decade -- the tragic, preventable death of a child whose parents chose not to protect them with vaccination -- should spark an immediate nation-wide campaign to ensure all children are protected against preventable diseases. Anything less is unconscionable.

I mean, look. You can have an amazing kitchen and cook fine dishes with two types of materials: stainless steel and enameled cast iron. If you’re going to have anything else, add a carbon steel pan. And you don’t have to spend a lot to get good quality. My favorite carbon steel skillet was 60$.

Three days on Xiaohongshu and I’m loving the home cooking videos. Some thoughts: they are not afraid of fats the way we’ve been taught in the US. But they’re also veggie heavy (yay!) And so many are using those damned Hexclad pans. Influencer culture?

Saturday’s cooking is turkey bone gumbo with the stock I made last weekend from the Thanksgiving turkey carcass and the turkey meat from some turkey wings I roasted this afternoon. The Cajun holy trinity is chopped and ready to go into the roux I’ll make with the turkey fat skimmed off the broth.

“Don’t feed the trolls” also extends to bad opinion pieces in papers of record. They run them bc people react to them the most. If we stop linking to bad columns and instead post thinkers we find valuable (& generate convo around it), incentives change. It’s not easy and takes constant practice!

Six decades later, Star Trek may still be the only franchise based on the ideas that diversity is strength, justice is the measure of civilization, bounty is to be shared, peace is worth the price, and all these things can be achieved. We need more shows that look ahead and find goodness.
