I tend to use a heavy amount of egg yolk to thicken my roux rather than just butter, flour and milk. Tends to yield a creamy sauce thats lighter than heavy cream, but also smoother (a ruined roux is a nightmare). It also fluffs up in the oven like a baked custard.
