Lentil soup can be served with a stew like consistency or blended and served as a thick cream. Lentils don't need to be soaked overnight. Just rinse to remove any dirt. Have vinegar or lemon juice to dribble on each bowl before eating. I prefer balsamic or pomegranate. Garnish with parsley. Enjoy.
