My dessert tonight was literally an ice cream sandwich! It’s a brioche roll cut in two. Then a scoop of ice cream is placed in the middle. Then it’s put on a modified sandwich press to toast it. It was delicious! Now to master brioche roll making!

A patisserie opened near our home! Their croissants are delicious! We picked some up yesterday to make breakfast sandwiches for Sunday brunch. We may have to get some fancier cheese for next time!

I had planned out a bunch of cookie ideas at the beginning of January and then got a jury summons. I’ve let these sit since then. Rather than just toss them, I’m using them as a warm up to get back into my groove. Happy Lunar New Year!

Getting back into the groove again. I’m feeling much better so I went for a 5k distance with a bit of running. It felt so good and I was able to maintain a 15 minute mile. My goal was 16. Go me! 🏃‍♀️
