okay, as a way of sort of gauging something for a potential project i am thinking about - if you’re a federal worker or contractor, and you’ve been impacted by doge, what would be the best way to solicit some information from you? not asking for your email or number, just asking a hypothetical.

Impromptu chili crisp day! Had some leftover chiles, so I threw some chili crisp together. This batch had fennel, star anise, black pepper, and Sichuan peppercorn. These spices worked well with the leftover fried ancho chiles and guajillo powder I wanted to use up + salt, sugar, & MSG to taste.

I decanted last week’s kraut today. 2% salt tastes much less salty than 3%. I’d let it ferment longer, but I think we’d run through the available sugars. It’s got a nice, brighter green color. It’s mild and crisp. I had a bunch on rice noodles with dill and sour cream—it was delicious.

This is incredibly stupid.

The video in the article is pretty disturbing. Some white dudes in plain clothes come and detain three people who are just trying to do their jobs. No papers, no badges, no uniforms. One “officer” is even wearing a mask. People are being disappeared.
