Yes the lighting in my kitchen and my photo taking skills leave a lot to be desired but this spatchcock chicken, which is a hybrid of Kenji’s and ATK’s techniques, is amazing. Made in a cast iron pan. Crispy skin. Juicy meat. Chef’s kiss.

Finished #Babel. Man that was heavy. The last 100 pages felt like a different book. The dash of fantasy mixed with historical fiction was an interesting choice. As someone that grew up in a former British colony, I’m all for trashing colonialism but IMO this book could have been better. #books
