So fun tidbit: Minecraft's villager trade options are all hardcoded. They cannot be altered with datapacks, short of using commands to set the villager's NBT data, which is pretty hefty work even then. Anyway I just implemented that myself for #Hrrmowners. Pay me Mojang.
