Some of the best foods are the result of preservation methods established before the invention of refrigeration. Example #1: Dry curing is a method of preserving meat that involves rubbing a piece of meat with a salt and seasoning mixture and allowing it to rest, reducing water activity.

HACCP (Hazard Analysis Critical Control Point) food safety methodology was developed for the 1960’s space program by NASA and the Pillsbury Corporation. It’s still used today to manufacture food.
