The prep for po boys from scratch is insane (pre prep) - cold veg (sourcing) - blooming the yeast and letting the dough for the baguettes rise 3 times (takes around 36 hours) - Remoulade sauce (needs to set for 24 hours) We still have to cut everything, bake the bread and ofc fry the catfish

Ran out of brown sugar one day and had to make my own (molasses and white sugar) I got comments saying “how do you have molasses and not brown sugar?” You buy molasses maybe 2 times in your life, and it stays in your pantry forever.
