I’m roasting a chicken tonight and since David has a cold I’m making chicken soup after. I spatchcocked the bird and now I’m dry brining it with salt & rosemary rubbed under the skin & baking powder on top, a little trick for xtra crispy skin. I’ll prick the skin all over & roast it at 400°.
