I may have lost my Korean card today when I was asked if I had ever been to an H-mart and my answer was, "No." To be fair, the closest one to me is 30 miles or 41 minutes away in Upper Darby. 😅

#Eckmancita wanted lollipops on her cake. She picked out the lollipops on her birthday on her first trip to the candy store and I baked the Smitten Kitchen flaky chocolate cake (GF!) tonight because baking a cake at 8pm on a Thursday is bonkers. She had pancakes for her birthday dinner.

I shredded chicken after cooking it in a crock pot last week, saved the liquid and mixed in mirepoix and froze six one-cup portions. I threw two blocks in the instant pot, a rinsed cup of red lentils and 4 cups of boxed chicken stock, and a cup of shredded chicken - 10 min npr and it was amazing!

Over Christmas my kids spent time with 5 cousins. At some point, 4 cousins and his sister dogpiled on top of #Eckmancito on the trampoline and he laughed the whole time. He gets exponentially better at Super Smash Bros every visit.
