Prep for tomorrow’s dinner party is nicely under way. Dessert is done and setting in the fridge. The pork is seasoned and will dry-brine for the better part of 24 hours. One veg is roasting so I can purée it tonight. The other veg is totally tomorrow, so she can wait, as can the compote for dessert.
