Henry Buttes recommends eating figs with oranges and pomegranates or pickling them in vinegar. These figs were roasted briefly in vinegar & honey then served on a salad with Serrano ham & roasted almonds and dressed with a Seville orange vinaigrette (no pomegranates to hand).

Boiled salad anyone? Doesn’t sound too appetising but they were a thing in the early modern period. The addition of eggs was highly recommended. (And for the record both the roasted onion & asparagus salads were good)

Mussels ‘seethed’ with onion, parsley & a splash of sack (sherry). Sometimes the simple things are best. #muchadoaboutcooking

After learning about the death of David Lynch I felt compelled to channel my inner Dale Cooper & make a cherry pie. It’s a wonderful accompaniment to a damn fine cup of coffee. (Yes, I was a huge fan of Twin Peaks)

To make a tart that is courage (😉) to a man or a woman. I feel that this sweet potato & quince tart from Thomas Dawson should be announced with a lascivious wink. Spanish Potatoes & quinces were deemed to have aphrodisiac qualities in the sixteenth century.

Does this bag contain my food heaven or my food hell? Find out in the latest episode of the podcast when I chat to Brontë Aurell about liquorice. Link in bio.

A Pepperpot from ‘Meg Dods’ cookbook c. 1826 This is a good demonstration of how dishes originally created by the enslaved made their way into middle class cookbooks (albeit an anglicised interpretation). You can find the recipe & podcast on the Comfortably Hungry substack (link in bio).

We got together for another foody chat, this time the theme was seasonal. 🌲🤶🥘🧆🥟🥧 Thank you @deliciouslegacy.bsky.social

One of the reasons I love podcasting is the fact I get to talk to so many interesting people and this episode is no exception! This time I’m chatting to Dr Peggy Brunache about how the enslaved people of the Caribbean used food as a form of resistance. Link in bio.

Blue cheese & date scones ‘cos it’s that sort of day.

Should you have any left over Christmas pudding I can thoroughly recommend these Christmas pudding truffles. You can defund the recipe over on instagram.

It's Stir Up Sunday! The day the plum pud is made ready for Christmas. I popped up on @mrssbilton.bsky.social 's Comfortably Hungry to talk about this wonderful British foodstuff. open.spotify.com/episode/3bMW...

PODCAST DROP! I was delighted to be invited by @mrssbilton.bsky.social to discuss my research on blood & black puddings in Ireland for Season 3 of her Comfortably Hungry podcast with @neilbuttery.bsky.social! Hope this inspires you to think differently about one of our oldest foods! #blackpudding

The latest episode of the comfortably hungry podcast is available now featuring @neilbuttery.bsky.social & @flavour-ie.bsky.social

Birthdays are a great excuse to eat exactly whatever takes your fancy. (In this case bucket loads of lard/butter, dal & molten cheese)

It’s kind of like apple pie and cheese but it just goes to show you gingerbread goes with everything. Gingerbread and chocolate ✔️ Gingerbread and pickles ✔️ Gingerbread and fried chicken ✔️ Gingerbread and leek soup ✔️

I’ve been raving about gingerbread & cheese for years & after watching her Amsterdam Christmas special it seems @Nigella_Lawson is a fan too. Pop over to Insta for my Ginger Snap recipe from First Catch Your Gingerbread. Great with cheese & as gifts.

It's #LancashireDay2023 !! Please enjoy the podcast episode from earlier this year - a collab with @mrssbilton.bsky.social n - all about that Lancashire speciality: TRIPE. Enjoy! open.spotify.com/episode/6WXb...

Who made their Christmas pudding yesterday? #StirUpSunday

I wrote a thing about the mutability of Xmas food traditions and also how great my book it. Self publicity klaxon alert etc. app.ckbk.com/features/the... - but as we near December and IT IS NOWHERE NEAR XMAS YET SO I DON'T WANT TO SEE YOUR PLASTIC XMAS TREE it seems timely.

Today is la dia de los muertos. In the first episode of Season 2 I discuss the use of chocolate in the day of the dead celebrations with Maite Gomez-Rejon who co-hosts the Hungry for History podcast with Eva Longoria Link to the Substack in the bio - it’s free to subscribe.

Are there any aspects of chocolate you would like me to investigate? The origins of your favourite chocolate recipe perhaps? Or a particular figure in the world of chocolate? Let me know! Episode 1 airs on Thursday 2 November! Subscribe to ensure you never miss an episode (it’s free!).

It’s publication day! I’ll be celebrating with a slice of Sachertorte. I had so much fun writing this book for The British Library If you love history & chocolate (or know of someone who meets this description) this is a great gift for Crimbo - a mere snip at just £10! Link in bio.

Not many places left for my *FREE* 'A Dark History of Sugar' talk on 26 Oct at 7pm (UK time). The talk is about 45 mins long and, like the last one I did, there'll be plenty of time at the end for a chinwag. Book your place through Eventbrite here: www.eventbrite.co.uk/e/7297186972...

‘There is nothing as aphrodisiac as a mousse au chocolat on the skin.’ Isabel Allende, Aphrodite: A Memoir of the Senses (1998) Discuss.

Just received some enormous quinces (5 to be precise) Recipe suggestions please.

Having a Charlie Bucket moment. Thrilled to get my hands on a copy of my new book The Philosophy of Chocolate to be published by the @britishlibrary next month. It’s available for pre-order now (link in bio). #philosophyofchocolate #chocolate #newbook #mrsbilton
