A delicious experiment. It's a NY state fair food. Probably the @nytimes.com or @newyorker.com has done segments all about it. It's served as-is traditionally with just chicken and bread but I bet some onions would make it even better! It was juicy and tangy with clear oregno and some vinegar notes

I had never even heard of a Spiedie before. I found a marinade (Salimidas) by chance at the store a few days ago and had to look it up. I was working indoors so rather than #grilling I used my oven and a pancake griddle at high heat.

Yesterday's experiment was something called a Spiedie (pronounced speedy) sandwich. It's a regional thing famous in Binghamton, New York. They have a huge competition for it each year, like a BBQ cook-off. An Italian-style marinade is used on chicken that is then grilled & served on Italian bread.
