GreenStalk update - onions and fennel planted and doing well - watering easy and so long as the garlic is not huge, you can put two of them in one planter sleeve- love the watering system and ability to turn it to give sun to each section as needed

🌱 GreenStalk update - transplanted onions and fennel growing & planted garlic starting to sprout - watering system works well - really recommend spinner to deal with low winter sun/too much rain - got it in black to match other pots (is on back patio so will add pollinator flowers in spring)

At holiday event of women’s org I joined in new little town we’re in, I was asked “what do vegetarians eat?”, “what do you mean you don’t celebrate Christmas?” and other lovely questions by people who have never apparently talked to anyone not exactly like them - what a place I have landed in!

Saw a Tick Tock with good info on past deportations of legal Mexican immigrants and American citizens - take a read - it’s happened before and can happen again + now they’re saying they’ll punish people who employ or ‘harbor’ en.m.wikipedia.org/wiki/Operati... en.m.wikipedia.org/wiki/Operati...

Elon may have brought EVs , online payments and Mars into the mainstream but I cannot support him financially so when we get our next car, it will not be a Tesla - what do you guys think of Lucid?

🍽️ main dish for vegetarians was veg pot pie- made ahead filling was awesome!!! Used white navy beans in place of chicken and chicken flavor veg broth - Blind baked bottom and lattice top crust were hard to work with gluten free and got dark on edges fast but will make again with regular flour

🍽️ don’t have photo but made gluten free scalloped potatoes with veg broth & cream (took forever to bake!) + requisite turkey for meat eaters (brined then cooked under foil stuffed with oranges) - made gravy ahead with neck, wine, herbs and added drippings from pan and blended on heat before serving

🍽️ bobs red mill gluten free cornbread needed butter and orange honey to help with dryness and slightly bland flavor (made day ahead and let “marinate”)+ made green beens with lemon zest/onion gremolata from Rainbow Plant Life - surprisingly popular for such simple dishes

🍽️ made gluten free flour sweet potato gnocchi & put in a tray with plastic wrap between layers and brown butter herb “sauce” in serving fish day ahead and was easy enough for hubby to pull out of to fridge and scoop up when floating on boiling water and drop in sauce (which melted on contact)

🍽️ used the instant pot to make wild rice mix (pressure cook 6 min w/dehydrated onions, rye seed, 1 cup veg broth for each cup rice) - mixed of red, wild, jasmine, and brown- nice “meaty” texture and filling and super easy - even little kids with “white food only” pickiness ate this

🍽️ another mostly prep-ahead item was roasted carrots - peeled, cut and put in zip lock with maple syrup, olive oil and salt/pepper day before then put the on baking tray in fridge then in morning and baked in top rack above turkey - even the kids ate this one bc it was slightly sweet

🍽️ used both homemade pomegranate and spiced plum jam with Gouda and sharp cheddar as appetizers and folks loved them so much we ran out of cheese - sliced cheese ahead of time and refrigerated it along with small bowls of jam them put them all out together- was nice prep-ahead item

🍽️ gluten free menu also included butternut squash rounds based on idea from genius Derek Sarno - so easy and u can make ahead - his presentation was better but I was in a hurry (14 hungry people to serve) - special equipment was tall metal “cake” molds but they cut cooked whole squash like butter!

🍽️ my first time trying to make a gluten free thanksgiving was success! Below is gluten free carrot cake - was heavy on spices and fruit so dense and rich - was version of cake from Vaughn on NYTcooking

🌱 papaya update- I transplanted the best seedlings to pots, 2 to a pot - most seem ok but some didn’t like being handled and shriveled up but that’s ok since “there can only be one!” (rest will be given away) - will plant them again into individual pots when they are bigger
