This coconut, tomato, and bean soup with ginger and spices from our friend Teri Adolfo (https://buff.ly/4hUfHEe) ticks all the boxes: flavorful, quick to prepare, and nutritious. She makes it often in her electric pressure cooker and tells us it takes her 20 minutes start to finish!

This recipe is simple but with our Moro beans and good longaniza, you’ll have a feast. Moros are a rare bean from Mexico with a firm texture and an out-of-this-world bean broth. You can substitute them with black beans but the Moros have a little something extra.
