I tried a recipe for Irish Potato Soup on line. I didn't love it. (Found it odd that it used oive oil. Really?) But I picked up a new technique. You boil cubed potatoes in 4 cups chicken stock and 2 cups milk (w/ seasonings) I made potato cheese soup, which dh loves. Added a little kale.
