I kept wondering what I did in late 2016 onward to keep my brain occupied instead of spiraling. And then I remembered that I was in pastry school (all lab classes) AND working almost full time. I'm not sure that's the answer this time...but maybe? 🤔

My starter is still building up strength, and it's definitely not bread ready yet. So in the meantime... I'm spending my snow day making @chefjohn.bsky.social's big bubble focaccia. There will be yummy bread, plus all the olive oil is like a spa treatment for my hands. 🫒

Ahh yes, my favorite phase of nurturing a sourdough starter. Taking forever to get bubbles, but not doubles, so there's no interesting pictures (or bread) to show for it. And no matter how well I think I wash my hands, there's always a bit of dried starter goop on/under one of my nails. 🥖 🫧

In other and way less exciting news: we've moved from the seed culture stage to the barm/actual starter stage. The bubbles are bigger, which is geeat, but we did slow way down. Here's where we were at the 8 hour mark. It's normal. It's chilly and rainy outside, but it'll perk back up.
