Ooh! I'd have someone grow and cook me skirrits, I hear they taste amazing and only fell out of fashion because potatos are so much easier. I might also explore other weird foods that have fallen out of fashion (yes, I just read Taras Grescoe's The Lost Supper, highly recommend).

Oh, and there was a place in Ithaca NY, right on the lake, that had an artichoke-spinach dip with fresh made tortilla chips still warm from frying, that was just amazing. The chef quit one day and no one else knew how to make either of them, so I stopped going.

And Asia de Cuba, they had these dulce-de-leche filled donut-bites that they made fresh when you ordered, nom. Oh! And there was a place in London, on Air St where Hawksmoor is now, the Japanese chef imported his local village wasabi-thing, which was made with like stems and stuff? SOOOO good.

There was this mostly just fine Italian place in Rochester, I think it was called Grisanti's: they had this garlic bread loaf that sat on a metal plate above the table candle so the butter melted through and it stayed warm and the bottom got a little crispy and it was incredible.
