Home made Moroccan style burger and chips for tea tonight. Lots of fresh coriander, mint and dill in those burger patties 😋

I’ve made some urid dal for lunch today. Mrs R isn’t a fan of coriander or chilli, so I have to adapt it at the table 😀

Absolute sickener for husbands everywhere. Sorry guys. Mrs R has on her bucket list seeing Andrea Bocelli live. I’ve just booked flights, hotel and tickets for his concert in his hometown at the Teatro del Silenzio (Theatre of silence) in July. I am so in the good books 😀

Practicing my Spanish cookery at the moment. This is a sort of made up as I went along quick paella, with chicken, chorizo, butternut and broad beans. Flop to pop in 20 minutes 😀😋

I have to say that was a gorgeous Easter Sunday lunch. I made the gravy with the lamb juices, fresh mint, rosemary and garlic roasted round the lamb. The wine was a bit extravagant at €20 but Jesus would approve, probably. At 15.5% it was what you might call “full bodied” 😋

Ah…. I was just going to buy this product and then I read in a review that it’s made in the USA. So, I’ve gone for an alternative that was made in China. No way I’m buying anything from America until Trump has gone 🤷

This evening we have been transported away from a damp Donegal, to the beautiful Spanish city of Seville, probably, for a Spanish inspired dish with chorizo, olives, peppers, chicken and an array of chopped fresh herbs.

Just got some yellow label (40% discount) 3% fat beef mince from Lidl for €2.51, so I’ve turned it into a couple of burgers and a couple of Lebanese style kebabs. Fresh dill, coriander mint, ginger, garlic, red onion, harissa and some Lebanese spice. Straight in the freezer 👍

Well that’s about it then for our Irish summer 😎 We’ve had a solid week of sunshine and it ends tomorrow ☹️ We’re taking this last opportunity to have a mini picnic in this lovely little spot near Annagry.

I know some people on here think I’m a curry monster 🤷 But on a gorgeous sunny day like today it’s really nice to just get out for a picnic 😎

Definitely a salad day in Donegal today 😎 That’s Keadue lower bay beach on the Wild Atlantic Way. Much busier than it usually is today because the sun’s out 😉

This is my interpretation of a baked potato and beans. I don’t do normal. There are nine ingredients in here and you get a point for each. I’ll start you off with ground black pepper and grated red onion. The other seven?

I’m torn 🤔 It’s chicken curry for tea. There’s a surprise whole Mrs R is away in England.🤣 But, I’m not sure what chutney I need to put out for it. What would you choose? “All” is the obvious choice but possibly you’re more discerning 🤔

Right, that’s the (chicken and aubergine) curry base made for tonight. Ginger, garlic, onion, curry leaves and a shit load of chillies. I’ll think about the spices later but I’ve definitely got a “methi” head on. Probably a ton of dried fenugreek leaves involved 🤔
