Let me also chime in for flax eggs for baking cookies and such; $5 will get you approximately a metric ton of ground flax seed, and one tablespoon mixed with three tablespoons of water and left to sit for a couple of minutes is equivalent to one egg. I do this all the time and it works fine

In Athens in 2022, I saw an exhibit called Liquid Citizenship from artist Femke Herregraven that looked like something straight out an Apple Store. Styled like merchandise displays, each "product" represents a country where citizenship can be purchased in some way.
