Yuuuuuup. It’s cool, and so far the best use for it is look dev and pitch materials, which are things that have been cobbled together with chopped up bits of other people’s work forever, and where the only thing the person pays for is the software to chop it up.

Why does this go so hard!?

Hahahaha! I have solved the left/right evenness problem. Equally crispy crust along the length. The last thing to do is to figure out how to do this faster so I don’t lose as much heat when I open the door of my cheap oven. The bread at the back is turning out way nicer than the bread at the front.

This week’s baguettes used a bit more water, a longer proof, I put my tray of boiling water in the oven early to build up more steam, didn’t open the oven for 15, let heat out then kept baking at lower temp for another 5. Also proofing in a couche helped the bottom, and I cut better ears.
