Beautiful aging colonies of Rhodococcus erythropolis, a soil Actinomycetes bacterium that we isolated from a commercial multistrain #kveik starter culture with students! Probably a rare contaminant, maybe from barley?

Today's brewing job is to make the second hibiscus tea + dextrose for another hibiscus wine carboy. I ferment two of those carboys at a time. The vast majority gets carbonated to 30 psi and served chilled on tap; the rest goes into bottles served still at room temperature.

Bomber ESB has plummeted from 1.050 down to 1.023 in about 36 hours from yeast pitch at 20 Celsius. There's something special about watching healthy yeast make a total street party out of your beer wort. WLP037 Yorkshire Square Ale Yeast.

English, as a trading language, is a rebel language. Grammarians roll in their graves at the truth of it. Linguists embrace the language as a living thriving organism... grammarians, no so much. English is the great octopus of languages for too many reasons to ellucidate.

For one thing, we go on about grammer... but really we have no rules in the English language... the lexicon is guided by public usage. How's that for an amazing creature? I mean... look at how words enter and leave our dictionaries. We are gods of communication... words are encapsulated ideas.

I have always loved, adored and drooled over the the most wonderful of all languages... the English language.

Also, when I was a much younger man I was very much a writer and a poet... and the English language, to me, is this vibrant live animal that we ride as a society. Eggorns, mondegreens, nonce words... English is a trading language & that's why it's the best of them all.

For 12 long years I lived in an avenue... well, on the corner of an avenue... and now I live in a street that, where we exist, is actually an avenue (for all intents and purposes - or, for all intensive purposes if you're into eggcorns)... living in avenues seems to be a big part of my adult life.

actually, I know some people think I drink a lot more than I probably do, I was a good boy and left some dark agricole rum in an unfinished glass when we turned the television off last night :)

That was a particularly messy stovetop brew day yesterday... for some reason the pot lid slipped to closed of it's own accord and without rhyme nor predictable reason so two small boil overs. Which have only just started happening. Anyway, the end was sweet wort. Cooking for grown-ups.
