Books that guide you through a new technique, step by step.

Finding books that cover one technique for beginners are proving hard to find - it's either guides to a technique, not necessarily for beginners, or beginner books that cover loads of techniques. Which are great, but don't help my research.
This might be the path I need!
I'm looking for books that cover a single technique, starting perhaps with simple projects that teach one skill aspect, then another skill aspect taught in another project. It doesn't have to be that format, but it's one example.
Ann Kingstone: Lace Knits, Stranded Knits, Cabled Knits. Each of these have a skill section, and a selection of designs ranging from simple and small to learn skills, accessories, larger projects with simpler designs, right through to complex designs.
