The four "official" ethnic minorities: Danes, Frisians, Sorbs and Sinti/Roma. But I think the only relevant ethnic minority party is the SSW representing Danes and Frisians.

It's well explained here. I believe (happy to be corrected) that SSW is the only minority protected by an international agreement (Kopenhagener Erklärung). https://www.wahlrecht.de/lexikon/minderheiten.html
