I worked for Waffle House during high school and college. They are compact to be efficient. Everyone was expected to share in the duties. There isn't enough room to have a separate dishwasher or to bus the tables. No one questioned it. Although it was in the 80s.

What the real issue is that tipping shouldn't only be for front staff, they should be pooled so that everyone who works to serve gets a portion of it. That way it wouldn't matter if your duties included janitorial and dishwashing, that's some everyone on the line has to do at some point anyways.

Front staff often doesn't want to do this because they're looking out for their own selfish interests over the interests of the entire restaurant team. They claim it's because dealing with diners is more stressful and demanding but who makes the food and who cleans the mess? They deserve tips too.
