Look up @photogami on TikTok, but for salmon basically if it’s farmed and frozen you’re in the clear, farmed salmon doesn’t have parasite issues. Tuna is considered parasite free. Still, the basic rule for at home sushi is to buy frozen and it’s fine.
Parasite risk is almost none (esp if farmed) but there’s a small risk of other pathogens since you’re not buying fish intended to be eaten raw and the cold chain might not be perfect.
Low risk if you’re healthy. I’m not; I buy wild salmon from small producers that explicitly handle for raw use.
