Pulled at a bit after 10 pm. I’m just gonna wrap it and put it in the oven on warm until the morning. Don’t wanna ruin the rest but boy does that bark look good.

This is pellet. I also have a Kamado Joe. I'd say the Joe is generally better, but I was feeling lazy today. I also have a grill with a sidekick. I live in Texas. We take our smoking seriously here.
I'm in SoCal. I love good BBQ but I'm lazy about it! The pellet is attractive in that I don't have to replenish on a really long cook. I've heard the smoke doesn't penetrate as deeply. So I keep holding back but lazy keeps calling.
Results are better on the Joe (which matches the Green Egg in quality). I have the Smoker rack. The pellet does have the advantage of letting you be lazy. Which is why I went with that today. Either way, the results are delicious.
I got a digital electric smoker 2 years ago and I have zero regrets. It takes zero effort to maintain the temperature and the smoke is pretty good. Is it perfect? No. Is it easier and good enough? Absolutely.

I usually do the butcher payer/foil thing. But that's when I'm only resting it for a couple of hours. Never tried it for 10.
I tried to look up the recommended food safety holding times and temperature for pork, but only googled a bunch of crap results.
Cooked pork needs to be stored at <40°F to slow bacterial growth.
That said, that looks excellently delicious! Great work!
