you're almost certainly not going to from beef. My main gripe about non-smash burgers is that most places don't rest them properly so the flavour doesn't develop and they're bland and dry.

My gripe is you get no choice. You have a choice with steak, so fine. But a burger now is “pink or choose something else”.
